{Easy} Personal Fruit Pizza

Ahh, Super Bowl Sunday, a time to park yourself in front of a wide screen, laugh (or cry if we’re referring to this year’s game) at $4.5 million commercials, and most significantly, EAT.

As all Super Bowl snacks should be, these individual fruit pizzas are easy. I wanted something sweet to serve alongside our Bacon-Wrapped Tator Tot and Jalapeño Rolls, Blooming Onion, and Buffalo Blue Cheese Chicken Dip because those things are heavy. I also wanted something personal-sized because who wants to deal with struggling to dig something out of a pan when you’re trying not to miss a single minute of action?

I give you: Easy Personal Fruit Pizza

Pillsburry Sugar CookiesStart with baking the cookies by following the directions on the package. I chose chilled Pillsbury Sugar Cookies because I prefer them over the store’s variety, but you could use any brand you want.

fruit pizza cream cheese frostingMix together the frosting and let it chill for a few minutes in the fridge. Frosting and batter eaters rejoice; this recipe makes 3-4 extra spoon fulls of frosting for you to indulge in!

strawberriesWash and prep your strawberries. I cut up enough so each individual pizza had either 1 small strawberry or 1/2 of a large berry.

Easy Personal Fruit Pizza

Ingredients

Crust

1 package of chilled sugar cookies

Cream Cheese Frosting:

1 8oz package of cream cheese, softened

1/2 cup granulated sugar

1 tsp. vanilla extract

Topping:

You can use any amount of any combination of fruit. I’ve listed what I used below:

1 package strawberries

1 package blueberries

1 8oz can pineapple tidbits

Directions

1. Bake cookies according to package directions, cool.

2. Mix together the cream cheese, granulated sugar and vanilla extract until well combined. Let it chill in the fridge for 3-5 minutes.

3. Spread the cream cheese frosting on the cookies (be generous!)

4. Place fruit on top of the frosting, gently pushing each piece down so they stick to the cookie.

They can sit out for a few hours at a time. Store in the refrigerator in an airtight container.
